Cookbooks can be confusing especially when they use terminology that isn’t familiar.  Rob Barrett from Cooking for Dads has a video that walks you through the entire process.  And another bonus is that he uses ingredients that we’ve all heard of!

cornbread stuffingEver think that conventional stuffing looks more like something you pull out of the garbage disposal when it’s plugged up?  I do.  It’s heavy, and I always wished I could find something lighter and sweeter.  My neice, Vanessa, found this recipe on facebook and I think it’s the greatest.  It’s light and tasty I think you might like it too.  This one you really can’t do ahead of time, but parts of it you could.  Just mix it all at the last minute.   Click here for the recipe.

sweet potatoBake yams or sweet potatoes with skin on, then scoop out insides. You could also use canned yams/sweet potatoes. Mash them. Then add frozen orange juice concentrate (not diluted) and salt. (Mom doesn’t specify amounts here because she says it is truly to taste.   So if you like the orangy flavor, add more. If not, less.   The salt is important for taste.)   Put in a casserole and just heat it up. Probably 30 mnutes on 300 degrees. Or freeze it and thaw it on serving day and then just heat up (it’s already fully cooked).

appetiszersIf you’re not a huge turkey fan, and you don’t mind bucking tradition, here are some great. warm and cheesy appetizers to think about.  Then again, why wait until Thanksgiving when you can eat them tonight?

cokechickenI know.  You’re out of ideas for dinner.  You’re out of ingredients and you won’t get to the grocery store until tomorrow.  Well, if you have a can of coke and some chicken, you’re in luck.  Just season your chicken with salt and pepper, throw it in the crockpot and pour a can of Coke over it (it must be regular Coke, not diet and not faux Coke.)  Turn the crockpot on low for 8 hours or high for 3.  Delicious!
